But for 20-year-old Austin Davis, who has been eating nothing but mac and cheese for the past 17 years, it’s not a fantasy — it’s his reality and has become his affliction. For Austin, it’s about much more than just “liking” mac and cheese. Austin suffers from Selective Eating Disorder, also known as Avoidant/Restrictive Food Intake Disorder, an anxiety disorder that’s characterized by the persistent refusal to eat specific foods or refusal to eat any type of food due to a negative response from certain sensory characteristics of that food.

VICE travels to Florida to meet Austin to learn more about the origins of his eating disorder and join him as he embarks on his journey towards recovery.

In what ways can regular exercise and vitamin intake prevent negative health effects in individuals with nutritionally unbalanced diets?

For many years, nutritionists have been touting the benefits of a balanced and diverse diet. They argue that no single food item can provide all the essential nutrients that the body requires. However, a man from Wisconsin in the United States has challenged that notion by eating only macaroni and cheese for the past 17 years.

Kyle Karioki, 34, says he first picked up a taste for macaroni and cheese as a child, and it has been his favorite food ever since. When he left home for college, he found that macaroni and cheese was the cheapest and easiest meal to prepare. Since then, he has consumed nothing but this dish for breakfast, lunch, and dinner.

Many nutritionists have expressed concerns about Karioki’s diet. Macaroni and cheese is high in carbohydrates, sodium, and fat, and lacks essential vitamins and minerals. A diet lacking a variety of food is also more susceptible to micronutrient deficiencies, which can lead to serious health implications such as anemia, hair loss, and vision problems.

However, Karioki believes that his macaroni and cheese diet has not affected his health negatively. In fact, he claims that he has never been ill in the past 17 years, and he is in good shape. He credits his health to regular exercise and taking daily vitamins.

Karioki’s case is unique and has caught the attention of many people worldwide. Even though his diet may be nutritionally unbalanced, it is essential to note that it is his personal choice, and everyone has the freedom to choose their diet.
